100g Ground Almonds
100g Self Raising Flour
25g Cocoa Powder
150g Caster Sugar
2 large Eggs
How to make the Chocolate, Almond & Pear Cake
Gently melt the butter for the pears over a medium heat in a frying pan. Add the brown sugar and orange zest. Stir until the sugar has dissolved. Add the pears and cook for a few minutes until tender - make sure you turn frequently to avoid them catching in the pan.
Grease a 20cm springform tin and line with baking paper. Mix the ground almonds, flour, cocoa powder. Beat the butter and sugar together until very light and fluffy - use a hand held whisk or mixer to make life a little easier! Beat in the eggs one at a time adding a little of the dry almond, flour and cocoa mix with each. Fold in the rest of the dry ingredients. If required, stir in a little milk to create a soft dropping consistency.
Place the chocolate cake mix into the bottom of the tin and arrange the pears on top. Finish with the buttery, orange juice if there is any left.
Bake in the centre of the over for around 45 minutes or until a skewer comes out clean.
Leave to cool in the tin for a little while before turning out.
